Honestly, I don’t always have time to carve little Madonnas out of cucumber slices. Nonetheless, I want to fill the lunchbox with delicious and colorful things. I want the little one to have fun opening it!
Since I made the lunch box for him, my own childhood memories have resurfaced. Suddenly, I remember the smell of lunch, the delicious tea, the fun of opening the box. The egg is much more delicious in bear form, of course? I use egg molds for this. You boil the egg normally, put it in the mold while it’s hot, and let it sit in cold water for 15 minutes. They are not essential but I think they make the lunch box even more appetizing!
Recipe for carrot muffins
- 250 g flour
- 2 teaspoons baking powder
- 2 eggs
- 4 tablespoons of oil
- 200ml milk
- 100g of Gouda cheese
- 1 carrot
Mix the flour and yeast with the eggs, oil and milk to obtain a firm dough. Mix the cheese and carrot with the batter. Pour the batter into the greased muffin tin and bake in the preheated oven (200°C) for about 15 minutes.
I advise you to make a large quantity so that you can freeze them.
